BLU Ocean is looking for a full-time Sous Chef to join their team in Port St. Lucie, Florida! The Sous Chef’s primary responsibility will be to assist in the overall success of the food program and culinary functions.

The right candidate will have:

  • At least 2-4 years of experience in restaurant industry is preferred
  • High School Diploma (or GED or High School Equivalence Certificate)
  • Food Handler’s Card required
  • Ability to read, analyze, and interpret common documents
  • Ability to respond to common inquiries or complaints from customers, regulatory agencies, or members of the business community
  • Ability to interact clearly and effectively, in both written and oral communication, with supervisor, clients, staff, vendors, etc.
  • Knowledge of County/State/Federal health and safety codes and regulations pertaining to food service operations, safe operation of commercial food service equipment, including deep fryers, ovens, cooktops, slicers, etc. is required
  • Knowledge of menu development, insight to marketing, cost, and wage control
  • Ability to maintain any government required license or certificate.
  • Safety conscious about the work environment and equipment

Our Sous Chef will:

  • Create and implement new menus and individual menu items for all outlets based on current food trends and regional tastes
  • Develop innovative menu selections for special themes and parties in accordance with client budgetary considerations and expectations
  • Confer with Director of Operations regarding new selections and changes
  • Monitors staff performance, product quality and production flow, foster improvement where necessary
  • Coaches, counsels, and develops staff
  • Maintains working rapport with all staff for efficient operation and service to customers
  • Audits food storeroom items and storage to maintain constant quality products to ensure adherence to all health code requirements
  • Listens actively and communicates clearly while interacting with customers to promote food products and directing staff activities
  • Adheres to control procedures for cost and quality
  • Orders all inventory on a weekly basis
  • Schedules and assigns duties to staff as necessary
